I hope that when I’m a mom, I can 1) get my kids excited about weird food and 2) sneak healthy ingredients into comfortable dishes. I’ll probably break them in early with green eggs and bacon (or ham). I absolutely love keeping baby spinach around because when used fresh, there is not much flavor to [...]
I would say that I’m not a very competitive person. Bragging about how good you are at something and winning is the stuff of daydreams. But bragging and then losing is pretty humiliating to experience and watch others go through. With that said, at my 8-5 cube job, we had a chili cook-off and for [...]
I’m excited to tell you about what I had for dinner tonight. It was really good. I used to hate mushrooms and I’m so thankful I love them now because without them, this dish just wouldn’t be the same. Cut up some onion and toss it in a hot, greased pan along with some salt. [...]
One of my new favorite condiments is an incredibly light and fresh salsa made from tomatillos. A tomatillo is a small Mexican green fruit that’s wrapped around a paper-like husk. It’s not sweet, by the way, but tastes similar to green tomatoes with a little kick. You can find these at just about any grocery [...]
One thing I love about these is that they’re perfect for entertaining. Make this for a dinner party and you’ll be the local eccentric condescending foodie in no time! (But seriously, eat it…)
If I had a grill, this would’ve been so much better. But it’s all good. I’ve been trying to stay away from bread, hence the bun-less burger, but feel free to make your own with the bun. Start by chopping up 1/2 medium onion or one small onion and putting it in a nonstick pan [...]
So, one of the many reasons I haven’t posted in a few weeks is because I’m trying to comfortably fit into a bridesmaid’s dress for my friend’s upcoming wedding in a few weeks. Fruit and fresh veggies have been most of my diet lately and you just don’t need a recipe for that… not to [...]
Couscous is quickly becoming a favorite side dish/starch these days. It’s so light & fluffy, takes no time at all to make, and is actually pretty nutritious. It’s got plenty of protein, fiber, vitamin B and fiber (if you get the whole grain kind). It’s a perfect addition to any kind of stew like I’ve made here.
Here’s a thought: Don’t go to the grocery store after you get your paycheck and when you’re hungry… at the same time. This meal is still relatively cheap, but it could have been a lot cheaper if I didn’t get such a nice piece of salmon. This is the most expensive meal I’ve posted on [...]
Despite how simple this dish looks, I’ve gotta say this is on my top 10 most enjoyed meals of this site so far. Call me a meat n’ potatoes kind of girl, or a sucker for grilled chicken, but this was delightful. Skip this part if you’ve already got your grill worked out, I just [...]
I think I can safely say that one of my “comfort foods” is anything with tomato sauce and chicken. I know, I’m so adventurous, right? So look, I’m using ingredients here that you may not think are that cheap. Some recipes I have are cheaper than others, and this is on the higher end of [...]
Ummm yeah, this was as good as it looks. This beast of an Asian dish was ridiculously easy to prepare, but does take a little vegetable-cutting time, FYI. Feel free to add any meat and any other veggie you want. Oh, and this makes about 2 servings. Go ahead and start making a few servings [...]
If you’ve never had paneer, a fresh, mild Indian cheese, you should definitely check it out. It’s solid enough not to melt quickly, but soft enough to give some great texture to a dish like this. Feel free to leave this out and add veggies or meat instead. Oh, by the way, the fresh cilantro [...]
So honestly, I didn’t know what to call this. I’m not going to claim that I’m an Indian food professional, and in fact, this dish was very much an experiment like everything I make. Nevertheless, it was REALLY good and tasted a lot like an Indian dish I had the week before at an authentic [...]
Here’s a crazy good appetizer or snack for your next Spring party! I bought like 1,000 rice wrappers for about 86 cents and I’m trying to find ways to use them. They’re actually really nice because they’re not too heavy like tortillas and you can (as I found out) use them for sweet food inside [...]
So here’s a really easy side dish. I actually put this on top of my salad one day at work and it was yum! It’s nothing fancy, I just didn’t have much food left so all of these ingredients tasted pretty super together. Start by boiling a serving of orzo or your favorite pasta. Orzo [...]
Share You guys. I’m serious. I don’t mean to brag but these were amazing. I put a junk load of feta on it so the health factor went down a few points, but ya’ know what? I don’t care. It was worth it. I didn’t have much food left in my fridge, but something awesome [...]
Some recipes are for shock and awe. This one’s for convenience and taste. But hey, we’ve all been there- you’re driving home from work and all you want is a big fat Taco Hell burrito with no beans and extra baja sauce with a Dr. Pepper. Or is that just me…. Anyway, here’s a quickie [...]
So it’s the end of the week and all I have left in my fridge is some leftover chili, an onion, a bell pepper and some spinach that isn’t quite fit for eating fresh. What to do? Soup! That’s what to do! What I love about soup is that it’s flippin’ fast, easy, and you [...]
I’ll be honest, there are few things out there that I think are better withOUT meat. For me, chilli is one of them. This recipe really doesn’t need meat in my humble opinion. However, if you choose to add some, try adding something more interesting than ground beef. Try kielbasa, chicken, or ground turkey. Watered [...]
I finally charged my “real” camera batteries, but not before I took these iPhone pics of this dish. Sorry about it, but I didn’t have time and hey, I’ve got a life too! . . . who am I kidding… I’m always kinda excited to post these yummy meals because I want you to experience [...]
Spinach. Yeah, that’s right, spinach! Do you KNOW how good spinach is for you? Prepare yourself. It has: Dietary Fiber, Protein, Vitamins- C, A, K, E, (Hey, that spells cake! Mmm…) Thiamin, Riboflavin, Vitamin B6, Folate, Calcium, Iron, Magnesium, Phosphorus, Potassium, Copper and Manganese. I highly recommend always keeping a bag of spinach or baby [...]
For those of you that whine about not being able to cook, this dish is for you. Let me break this down for you people (ahem, bachelors!) who think this looks too hard. Oh, and if you’re wondering if this was yummy, let’s just say my plate was clean before the movie previews were even [...]
